These days I am enjoying apple ciders from Champlain Orchards in Shoreham, Vermont. This eco-certified farm sits amid rolling hills of beautiful Champlain Valley with views of the Adirondacks. They offer lots of PYO berries, peaches, and apples in addition to their own line of award winning apple ciders, some even single varietal. These ciders are wonderful alone, or with unexpected pairings: Mac & Maple (semi-sweet) with bbq chicken pizza; Farmstead (semi-dry) with sauteed fish and peach salsa (picture below).
